In the vineyard...

The vine is grown without chemicals, pesticides or insecticides. The first objective is to structure the soil and promote life in order to create a balance between the plant and its soil. We use prophylaxis by aerating the fruiting zone and foliage; in this way, we limit cryptogamic attacks and get more balance.
Performance target: 40 hL/Ha

In the cellar...

After manual harvesting and a careful sorting carried out by the harvesters, direct pressing is done in a pneumatic press followed by a 24-hour static settling. Then we take the must from within the vat to let it begin its natural fermentation . As soon as the first fizz appears, the transfer is done into half-muids (500l). We then let the wine ferment and mature for about 12 months.

Grenanche gris (40%), Chenin (40%)
Roussane (15%), Terret Bourret (5%)
